Crockpot Fajitas

This was the very first recipe that I tried off of Pinterest and it is still in my dinner rotation today. I’ve tweaked it a little bit, but you can adjust however needed. Super easy to make, makes the house smell awesome as it cooks all day, and tastes great! Great for a Mexican themed dinner in.

Ingredients:

  • Boneless, skinless chicken breasts (3-4)
  • One package of taco seasoning
  • One yellow onion
  • One each of green, red, orange, and yellow pepper

Instructions:

  1. Place the chicken breasts in the bottom of your crockpot
  2. Sprinkle taco seasoning all over the chicken
  3. Cut up the onion as much as you would like (long strips or short chunks), and sprinkle throughout the crockpot
  4. Cut up the peppers as you would like and sprinkle throughout the crockpot
  5. Cover the crockpot with the lid and set it to low heat. Let cook for 4-6 hours.
  6. Once cooked shred the chicken while still in the crockpot
  7. Serve on top of tortillas and enjoy
